One-Bowl Banana Bread Recipe (5 Ingredients, No Fuss)

All you need is one bowl. No blending, chopping or melting - this is a five-ingredient, five-minute recipe you can simply stir together. It also happens to be a genuinely good one: protein-rich for sustained blood sugar levels and energy regulation, and a good source of zinc, which supports immune function and plays a role in hormone production. It's free of refined sugar, dairy, gluten and soy.

One of the most common nutrient gaps we see in clinic, particularly with women and children, is good quality protein - especially at breakfast and snack time. This recipe covers both effortlessly, and works just as well as a mid-morning or afternoon pick-me-up.

We need protein to thrive. Most of us don't get enough of it from quality sources, particularly earlier in the day, and it's worth having some in every meal and snack. As a general guide, most women benefit from 25-30 grams of protein at each main meal.

Good quality protein sources can:

  • build and repair tissues and muscles

  • support the production of hormones and enzymes involved in mood

  • stabilise blood sugar levels

  • keep you fuller for longer

  • support normal hormone function

  • support healthy weight management

We won't keep you any longer from the recipe itself - here it is.

Ingredients:

  • 200 grams almond meal

  • 4 bananas, mashed

  • 2 large eggs

  • 5 tablespoons honey, maple syrup (or an alternative such as monk fruit)

  • 2 tsp baking powder

  • Optional — 1 teaspoon vanilla bean paste and 1 teaspoon cinnamon powder

  • Optional — a teaspoon or two of sunflower or pumpkin seeds scattered on top, or a few thin banana slices arranged before baking

Method:

  1. Preheat oven to 160 degrees celsius (320 degrees fahrenheit)

  2. Line a bread tin with baking paper

  3. Add all ingredients (except the seeds, if using) to a bowl and stir until combined

  4. Pour the mixture into your bread tin

  5. Top with seeds or banana slices, if using

  6. Bake for 40-50 minutes

A finishing touch:

We love this served with a slab of butter, or with Greek yoghurt - for a dairy-free option, coconut yoghurt works beautifully.
